Stuffed Bell Peppers

Colorful bell peppers stuffed with seasoned ground beef and rice

These stuffed peppers are a complete meal in themselves – colorful, nutritious, and absolutely delicious.

Ingredients:

  • 6 large bell peppers, tops cut and seeds removed
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large skillet and brown ground beef.
  3. Add onion and garlic, cook until soft.
  4. Stir in tomato paste, diced tomatoes, and seasonings.
  5. Mix in cooked rice and half the cheese.
  6. Stuff peppers with meat mixture.
  7. Place in baking dish with broth in bottom.
  8. Cover and bake for 45 minutes.
  9. Top with remaining cheese and bake 10 minutes more.

Choose peppers that can stand upright. If needed, trim a small slice from the bottom to help them stand stable.
